David Lloyd Clubs

David Lloyd is an international brand with 95 leisure clubs in the UK and Europe. With 475,000 members, it’s the brand leader in the health and fitness market in the UK, employing 6,000 staff. Wanting to uplift their food and beverage offering to increase footfall and dwell time, David Lloyd worked with us to evolve their approach and execution, putting their members at the heart of the transformation.

Opened in 2016, LEGOLAND Dubai is part of a unique resort owned by Dubai Parks and Resorts (DPR) and comprises three separate theme parks – LEGOLAND, Motion Gate and Bollywood. Peppercorn were drafted in to work with Merlin Entertainment to deliver a dynamic range of LEGOLAND food and beverage propositions.

Smokehouse BBQ at Chessington was the second smokehouse for Merlin Entertainment, embracing the trend for American barbecue food in the casual dining arena and turning it into the immersive experience of a leading UK theme park. Our brief was to create an on trend concept and design, service demand in good time and increase capacity.

With nine forest locations in England and Scotland and part owned by the Forestry Commission, Forest Holidays offer short breaks and holidays in luxury cabins and treehouses, employing 600 staff. We worked with Forest Holidays to update their food proposition to increase sales, profit and customer satisfaction.

Willows Activity Farm

Design and theme a functional kitchen with restaurant to serve busy families quality and quick food. The from scratch build would have to be overseen closely and all contractors, furniture suppliers, kitchen equipment, signage fitters would have to be tendered and sourced. Ultimately lower skilled staff would have to be inducted and trained ahead of the restaurant opening to produce high quality food at speed. All this in 4 months, challenge accepted!
